Winemaking
From a plot of Antão Vaz, the best grapes were selected, which remained on the vineyard until November. In this way, rot was allowed to develop in these berries, increasing the concentration of sugars. Fermentation is subsequently carried out at low temperatures around 12ºC, for around 30 days.
