Harvest/Vinification: Total stemming, crushing and pressing. Winemaking in an open spout. Fermentation in stainless steel vats with temperature control. Interruption of fermentation, 8 to 10 days after the start of alcoholic fermentation, by adding 96% wine alcohol in order to maintain the desired amount of sugar. Winemaking done according to traditional methods
