Clandestino Red 75cl
From Latin clandestinus. In secret; done in secret; without anyone knowing; hidden; that is contrary to laws or morals. Planted in the open air and in the heart of Dão, the grapes that make up this Clandestino have distant origins. Made in a complicit manner, by all those who harvested and worked on them, this wine reveals itself to be fresh, greedy, enigmatic and even – say evil people – immoral.

Vineyards: Vineyards that surround Adega da Teixuga, planted at 420 meters, exposed to the south, 8 years old.
Vinification: The two different varieties that make up the batch were harvested manually and vinified together in stainless steel tanks, with the different degrees of maturation of both contributing to the balance of the whole. Fermentation was carried out with temperature control to around 24º C and gentle pumping over in order to favor the elegance of the tannins. After malolactic fermentation, the wine aged in stainless steel tanks for around 24 months.

TEST RESULTS
By having the two varieties that make up the batch fermented together, this promoted a greater integration of their particular qualities. One of the grape varieties is known for its chromatic and aromatic intensity, the other, quite the opposite, is known for its discreet color and restrained and austere aromas, which gives rise to a wine with the best of both worlds. The aromatic exuberance of one, with its tones of red and black fruits, appear tempered by the fineness and freshness of the other variety, with its soft aromas, which highlight black cherry and dark chocolate, pepper and a refreshing minerality. Elegance and harmony are two striking characteristics, which appear evident in the mouth, where the freshness and quality of the soft tannins contribute to a whole, admittedly clandestine in this region, but owing to its identity!
HARMONIZATION
Roasted cod, lagareiro-style octopus, roast beef, Alentejo-style pork. It should be served at a temperature between 14 to 16ºC.
