Winemaking
Viognier, a recent grape variety in the Alentejo region, demonstrates in this wine its oenological characteristics for the production of quality wine. The grapes, coming from relatively young vines, made it possible to obtain a balanced and aromatic wine. Manual harvesting, grapes collected in the morning so that they arrive at the winery at a good temperature. After crushing and completely de-stemming the grapes, pressing, decanting using the cold system for 24 hours and alcoholic fermentation with temperature control at 16ºC took place. After stabilization and filtration, bottling followed and a 3-month aging period in the bottle.
