Winemaking
In the vineyard, the grapes are produced exclusively in vineyards installed on the Associates' Properties, in the Borba sub-region, which are audited and certified in an integrated production system and approved for the sustainability plan for Alentejo wines. Grapes harvested by hand. At the winery, after total stemming and slight crushing of the berries, the alcoholic fermentation process continues in a stainless steel mill, with mechanical treading control, ending in maceration for 10 days, under temperature control at 22-24ºC. Malolactic fermentation took place in a small stainless steel tank. A period of 6 months in new French and American oak barrels preceded bottling and the final stage in an air-conditioned cellar for 6 months.
