Vinification: The grapes are harvested during the cooler periods of the day, arriving at the cellar fresh and intact. They are then chosen and distributed according to the characteristics that the winemaking team desires for the brand. Fermentation takes place in stainless steel tanks with temperature control, after a long period of skin maceration. At the end of fermentation comes the twist: aged for 12 months in custom double barrels. The top and bottom are French oak for subtle spice, while the long side planks are American for vanilla notes.
