With grapes from the Douro Superior, namely from a vineyard around 60 years old, selection of red grapes from native varieties. A wine like it used to be made. With structure, body and freshness.
Prohibited and Permitted wines increasingly have a common denominator: Minimal intervention in both the vineyard and the cellar. We therefore respect what the vineyard gives us, and we try to make the transformation of grapes into wine as natural as possible.
Grape varieties: 100% red grapes (tinta da barca, red tint, francisca tint, rufete, and others)
Soil: Shale/granite origin.
Age of the vines: 60 years
Tasting Notes: This wine has an aroma of red fruits. Fresh, light and appetizing wine.
Vinification: After manual harvesting, and transportation to the winery in small boxes (18kg-20kg), the grapes were trodden by foot in a small press. Fermentation started spontaneously and was then pressed. Fermented the rest of the time in used 225L barrels.
Aging: 6 months in used barrels.
Harmonization and longevity: It is a challenge for gastronomy. It should be drunk at 15ºc. It can be consumed immediately or within the next 5 to 10 years, as long as it is stored in a cool, dry place, protected from light and without temperature fluctuations.
