Harvest/Vinification: The grapes are harvested early, when they have lively acidity and less developed tannins. A gentle pressing, followed by slow fermentation at low temperature, retains much of its young and fresh characteristics, leading to the production of a pure and delicate base wine, which is then subjected to a second fermentation in tanks at 16°C. It is this second fermentation that gives it its characteristic effervescence and a creamy, complex finish that constitutes its trademark. The final wine is cold stabilized and then bottled
