Roaming freely in the cork oak forests, where it preferentially feeds on acorns, the Alentejo pig, an indigenous Portuguese species, is the only survivor of grazing pigs in Europe. Due to the way it marks the landscape and preserves the region's Mediterranean forest, it is a heritage of Alentejo. It is also a gastronomic treasure and an invitation to pleasure. By associating it with this wine, we combine, at the table, two major symbols of Alentejo

Tasting note - Aroma: A blend of aromas from the fruitier side to the more bushy side

Tasting note - Taste: In the mouth it presents volume, very well integrated tannins and good acidity, which make it an extremely "gluttonous" wine

Harvest/Vinification: Vinified from selected grapes from plots of Alicante Bouschet, Touriga Nacional and Syrah. The grapes were harvested at their optimum point of phenolic/aromatic ripeness. After de-stemming and gentle crushing, a 4-day pre-fermentation maceration was carried out to increase its complexity. Fermented at 26ºC with gentle pumping over, preserving the fruit and extracting soft tannins, important for the balance of the final wine.
