THE WINE
Quinta dos Carvalhais Único is, as its name suggests, a unique wine, a Dão red of exceptional quality, the ultimate exponent of the elegance and richness of this brand. Heir to ancient knowledge, Quinta dos Carvalhais combines experience with innovation to create very elegant wines, with intensely delicate flavors and the unique personality of the region.
TEST RESULTS
The delicacy of Quinta dos Carvalhais Único 2015 is expressed both in color and aromas. It is a wine with notes of black fruit and wild fruit, resinous nuances, aromas of forest, moss, pine, "sous-bois" and a very fresh mentholated touch. It is the exact expression of the Quinta dos Carvalhais terroir. It has a firm and defined attack, with polished tannin, in a fresh, elegant and enveloping body. The aromatic complexity is confirmed in the mouth, complemented by some floral touches that last in a voluminous, delicate, long and persistent finish.
VINIFICATION
The grapes were harvested by variety and plot in 20kg boxes and vinified separately in stainless steel vats. Alcoholic fermentation took place in around 8 days, at an average temperature of 28º C, with Touriga Nacional and Alfrocheiro remaining in post-fermentative maceration for a further 8 days.
MATURATION
After alcoholic fermentation, malolactic fermentation took place in stainless steel vats. This wine aged and matured in new and used French oak barrels for 18 months. During the maturation phase, numerous tests were carried out to monitor the evolution of the different wines. The wine underwent light fining and filtration before bottling. In order to preserve its highest quality, it was bottled without cold stabilization treatment.
SAVE
Like all Dão red wines, they have a very long bottle life, presenting themselves in good drinking conditions for a period that, at minimum and in the best storage conditions, easily reaches 10 - 15 years.
SERVE
It must be kept lying down in a cool, dry place. Serve at a temperature between 15ºC-17ºC, and must be decanted after 4/5 years of age. Once the bottle has been opened, it should be consumed on the same day, although it will remain in good condition for some time, as long as it is well corked, and ideally, with some vacuum.
ENJOY
It is a wine that invites you to the table, it is very gastronomic. The elegance and freshness of the wine make it versatile, and it can accompany either a lagareiro-style octopus, an oven-roasted pork neck or even a rib-eye rice broth.
