VINIFICATION: Manual harvesting. Total stalking. Cold pre-fermentation maceration for 48 hours. Temperature-controlled fermentation (22ºC -28ºC) in mills with mechanical treading. Malolactic fermentation in French oak barrels.

AGEING: 50% of the wine aged for 6 months in barrels
